Someone contacted me about doing a picture book for 6-8 year olds. The premise sounds fun and something I'd like to do, but the turnaround is 2-3 weeks, which sounds insane to me. I haven't yet done a picture book yet so I'm new to the process, but that timeframe sounds unrealistic. I also don't know this person (they contacted me via my website), so I'm not sure how legit they are. Any advice?

this is a video from Will's channel that you should watch. I will also say that in the videos on illustrating children's books it is mentioned that the minimum time frame should be around three months.

First I would like to say your work is really lovely,but 2-3 weeks please dont do this to yourself it will be too stressful. I dont have any book illustration experience ,but it just sounds like too much for anyone also there are always problems and changes -sounds like the person who is hiring you has let his own deadline fail and now has to rush everything.
