READ and STUDY children's books (or the genre you want to illustrate/design). Seriously, you'll learn so much.

Check out these books (they're old but have great information): Picture This: How Pictures Work by Molly Bang, Art and Design in Children's Picture Books by Lyn Ellen Lacy, and Bookmaking: The Illustrated Guide to Design/Production/Editing by Marshall Lee. The last one's a beast; haven't made it through that one myself yet.

To learn general graphic design principles, Satori Graphics on YouTube is very informative and easily digestible.
This might be a little more in-depth than you were looking for, because it isn't just one class, but it will give you a solid knowledge base. And if you have any questions, feel free to pick my brain -- happy to help if I can!

@Melissa_Bailey This is a great list, Melissa! Thanks for linking everything. Molly Bang's book really opened my eyes to the power of composition a few years ago, and I'm definitely due for a reread. I'll check out the other two you recommend.
Satori Graphics seems to be pretty close to what I'm looking for right now. I'll spend some time with those.
