Vesper Stamper- Photoshop technique- starts painting in black initially for color images. Anyone know how to do that?

Hi all-
During the live Zoom event with Vesper Stamper, she talked about a photoshop process where you make an image in photoshop in different values of blacks and grays, but then there are steps involved where you use the RGB channels to add color in another layer. She showed an image of strawberries with leaves as an example.
Does anyone know how to do that?
I’m interested in trying it out. -
